Sweet Potato Casserole

Ingredients

  • 6 large sweet potatoes, peeled and cut into chunks

  • 1 cup white sugar

  • ½ cup brown sugar

  • 2 tablespoons ground cinnamon

  • 1 tablespoon butter, softened

  • 1 cup miniature marshmallows, or as needed

Directions

  1. Place sweet potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.

  2. Preheat the oven to 375 degrees F (190 degrees C). Grease a deep casserole dish.

  3. Mash potatoes with a potato masher in a bowl until no large lumps remain. Stir in both sugars, cinnamon, and butter until well combined, then transfer to the prepared casserole dish. Cover with a layer of miniature marshmallows.

  4. Bake in the preheated oven until marshmallows are browned, about 30 minutes.


The Best Turkey Chili Ever!

Ingredients

  • 3 tablespoons vegetable oil, divided

  • 1 ½ pounds ground turkey

  • 1 (1 ounce) package taco seasoning mix

  • 1 teaspoon ground coriander

  • 1 teaspoon dried oregano

  • 1 teaspoon chili pepper flakes

  • 2 tablespoons tomato paste

  • 1 (14.5 ounce) can beef broth

  • 1 (7 ounce) can salsa

  • 1 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree

  • 1 (7 ounce) can chopped green chile peppers

  • 1 medium onion, finely chopped

  • 1 green bell pepper, diced

  • 3 medium zucchini, halved lengthwise and sliced

  • 1 bunch green onions, chopped

  • 1 cup sour cream

  • 1 cup shredded Cheddar cheese


Directions

  1. Heat 1 tablespoon of oil in a large stock pot over medium-high heat. Crumble turkey into the pot, stirring with a wooden spoon to break apart as much as possible. Season with taco seasoning mix, coriander, oregano, chili flakes, and tomato paste, and mix until meat is evenly coated with seasonings. Continue cooking, reducing heat if necessary, until turkey is well browned.

  2. Pour in beef broth, and simmer to reduce liquid slightly, about 5 minutes. Add salsa, tomatoes, and green chilies, and continue cooking at a moderate simmer for ten minutes. Adjust the thickness at any time you feel necessary by adding water.

  3. While chili is still cooking, heat one tablespoon of oil in a large skillet over medium-high heat. Cook onion and green bell pepper, stirring occasionally for 5 minutes, or until onion is translucent and bell pepper is lightly browned. Add onion and bell pepper to the chili, and continue cooking at a very low simmer.

  4. In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the zucchini, and cook stirring occasionally, for 5 minutes, or until lightly browned. Add the zucchini to the chili, reduce heat, and continue cooking 15 minutes more. Again, adjust the consistency with water as needed.

  5. Ladle chili into serving bowls. Top with sour cream, green onion, and cheddar cheese, and serve.



Pumpkin Spice Pancakes

Ingredients

  • 1 cup all-purpose flour

  • 2 tablespoons white sugar

  • 1 tablespoon pumpkin pie spice

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup buttermilk

  • ½ cup canned pumpkin

  • ¼ cup canola oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 serving nonstick cooking spray


Directions

  1. Whisk flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt together in a large bowl. Whisk in buttermilk, pumpkin, oil, eggs, and vanilla extract until well blended.

  2. Spray a large nonstick griddle or skillet with cooking spray. Heat over medium heat.

  3. Pour batter by scant 1/3 cupfuls into the hot skillet, working in batches. Cook until bubbles form on the surface of pancakes and bottoms are lightly browned, about 1 1/2 minutes per side. Repeat with remaining batter, spraying the skillet with cooking spray between batches as needed. Serve warm.

Create a cozy reading zone

Winter and fall are undoubted, great seasons to stay indoors and relax with a good book. And of course, your living room sofa is just perfect for that!  But you can as well create a space for a warm reading niche just by the corner of your home. Place an upholstered bench or chaise in a bay window so that it becomes a cozy place to unwind after hours. Alternative, you can decorate the place with a window seat, pillows and a soft throw blanket. You’d love it.

Light a Fire

Good for you if you’re fortunate enough to have a fireplace in your home. But if you have none, a few candles will help decorate your space in a similar radiance. You’d enjoy the warm atmosphere better if the candles are seasonally scented with  pumpkin or cinnamon spice.  There’s a sense of nostalgia that comes with smell (no pun intended!)

Can you believe it’s already November? I can’t either! With the fall chill in the air, the spicy scents coming from the kitchen, and the leaves almost gone, I am getting ready for Thanksgiving. Every year, I do an article on Thanksgiving tablescape inspirations, and here is this year’s.

Here are 5 Thanksgiving Tablescape ideas to get you inspired!

  1. Bring the Outdoors In. By adding organic botanicals to your tablescape, you add both a “wow” factor, and a little whimsy. We love this idea! The bold colors from fruits and vegetables can really make your table “pop.”

Well, it's been a long winter-- but we are on the cusp of Spring, I just feel it! It's that time of year when you want to freshen up your space- making it brighter, airier, and uncluttered. Which is why I thought it would be fun to share some gorgeous white interiors to inspire you!

This beautiful neutral color palette features white in a classic, timeless manner. In the 90's, we were so afraid of white walls, but rest assured-- you can have a gorgeous space with a mostly white color palette that is as sophisticated as it gets!

Implementing metallics and fresh plants is an easy way to pull together a white color palette. There is something so fresh and inviting when designing with this scheme. Another beautiful perk of a neutral color palette, is that is emphasizes the beautiful details of your home's architecture.

Cozy Up! How to Warm Up Your Interior for Winter

It's that time of year- when nesting begins; you start lighting candles and fires and curling up in plush blankets. It's the time of year when we want to snuggle up with a good book and celebrate being away from the elements. 

Here are some ways in which you can make your space more cozy during the colder months. 

1. Candles and sparkle lighting. I always love to put white holiday lights on topiaries and drape them in otherwise darker places in my home. This gives your space a glow and sense of coziness.

2. Blankets and Soft Fabrics. Drape your furnishings with plush throws and pillows. This creates both a visual warmth as well as an acoustic one within your space. It's always nice to have something to curl up with when relaxing.

Can you believe it’s fall? Neither can we. Seattle had a very mild summer! As it starts to get dark earlier, the weather takes on a certain chill, and we start to nest, it’s always nice to make our living space a little more cozy to prepare for the winter months ahead. Here are some ways in which you can make your space feel warmer, more inviting, and just plain comfortable.

It seems like an obvious solution to the colder weather, but it’s definitely time to bring out those extra throw blankets and place them throughout your space. There are so many gorgeous options out there now- we are loving the blankets with a lot of warmth and texture.

Add some sparkle to your interior with small lights and candles. This is one of the simplest, most impactful way to make your space feel warmer, more welcoming, and just downright cozy. For extra oomph, use a wax warmer with your favorite fall scent to complete the vibe.

Low lighting can do wonders for a space. Invest in fun, dim lamps and put them throughout your space. It is common for most people to forget to use their accent lighting as opposed to their overhead lighting. However, studies have shown that the use of ambient lighting can decrease stress levels and increase seratonin levels.

Designing the Perfect Guest Retreat

Your guest bedroom should be as inviting and comfortable as the other bedrooms in your home! There are so many details that you can add to ensure that your guests have a wonderful stay, such as plush furniture, boutique bedding and luxurious small touches.

Everything from wallpaper, draperies, and other soft details will make the room feel cozy and warm.

It's in the small things when it comes to creating an environment your guests are sure to remember. These include placing a table lamp next to the bed with a glass for water. Fresh flowers are always a nice touch. Give your guest some fun reads about things that are local (local books and magazines are always a hit).  Always provide your guest with extra blankets. Many people sleep cooler than others and oftentimes guests will not want to as you for another blanket. Give them the option to cozy if if needed.

Having a side chair or a place to put their luggage is key. Guests shouldn't have to live out of their suitcase while on the floor. Make it easy for them to access their belongings. Providing your guests with a mirror is an added bonus. Since sometimes you may have a full house, it is key to have a place for them to get ready without having to go to the bathroom area.

I like to place a bottle of local wine and some snacks in my guest bedroom when I have visitors. It gives a nice touch and provides your guests with something to nosh on in the later hours.

We love this time of year, when the sun is shining and we are spending time on our balconies or in our yards, breathing in the fresh summer air! If you're seeking a little outdoor inspiration, we've picked out our favorite little outdoor Oasis's and we will tell you why.
